Instructions
Melt the butter and dark chocolate in a small saucepan or microwave until smooth.
In a bowl, whisk eggs, caster sugar, and demerara sugar until pale and fluffy.
Combine flour, cocoa powder, baking powder, and salt in a separate bowl.
Gradually fold the melted chocolate mixture into the egg mixture.
Gently fold in the dry ingredients and chocolate chips.
Drop tablespoons of batter onto a lined baking tray and bake at 160ºC fan / 170ºC conventional for 12-14 minutes.
Cool on the tray for 10 minutes before transferring to a cooling rack.
Notes
For a richer flavor, use high-quality dark chocolate. Sprinkle sea salt on top for a sweet-salty finish.
