Ingredients
  

Brookie Batter

  • 225 g dark chocolate chopped
  • 56 g butter salted or unsalted
  • 2 eggs room temperature
  • 100 g caster sugar
  • 90 g demerara sugar
  • 1 tsp vanilla extract
  • 95 g plain flour all-purpose
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 85 g dark or milk chocolate chips optional

Instructions
 

  • Melt the butter and dark chocolate in a small saucepan or microwave until smooth.
  • In a bowl, whisk eggs, caster sugar, and demerara sugar until pale and fluffy.
  • Combine flour, cocoa powder, baking powder, and salt in a separate bowl.
  • Gradually fold the melted chocolate mixture into the egg mixture.
  • Gently fold in the dry ingredients and chocolate chips.
  • Drop tablespoons of batter onto a lined baking tray and bake at 160ºC fan / 170ºC conventional for 12-14 minutes.
  • Cool on the tray for 10 minutes before transferring to a cooling rack.

Notes

For a richer flavor, use high-quality dark chocolate. Sprinkle sea salt on top for a sweet-salty finish.
