Ingredients
  

  • 1 cup Pitted dates notes: Medjool recommended for sweetness
  • 1/2 cup Rolled oats notes: gluten-free, if needed
  • 1/4 cup Almond butter notes: creamy, unsweetened
  • 1 tbsp Chia seeds
  • 1 tsp Vanilla extract

Instructions
 

  • Add the pitted dates to a food processor and pulse until they form a paste.
  • Add the rolled oats, almond butter, chia seeds, and vanilla extract to the processor. Blend until combined.
  • Transfer the mixture to a bowl and scoop out tablespoon-sized portions.
  • Roll the portions into balls using your hands.
  • Place the balls on a plate and chill in the refrigerator for at least 30 minutes before serving.

Notes

Store the energy balls in an airtight container in the refrigerator for up to one week. Perfect for on-the-go snacks or a midday energy boost!
